Known for its tapas, paellas, and seasonal dishes, Jaleo has featured gazpacho—a chilled tomato-based soup—as a tribute to Chef Andrés’ wife Patricia’s family recipe.

This dish is more than a refreshment; it’s a reflection of heritage, simplicity, and summer’s bounty. Inspired by that legacy, I recreated a version in my own kitchen—infused with fresh tomatoes, cucumbers, and a whisper of balsamic from Bertolli’s bottle, as seen in my prep photos.

I made wraps, because during the process my chickpeas got blended together with the juices. Oh jungles. I forgot to drain the liquids from the can. It didn’t disturb my creativity, and I proceeded peacefully with tortilla wraps.

  • 1½ cups cooked chickpeas (or 1 can, drained and rinsed)
  • ½ small red onion, finely chopped

  • ½ tsp smoked paprika (or turmeric for a golden hue)
  • 2 tbsp sesame oil (or olive oil)
  • 1 tbsp lemon juice
  • ÂĽ cup oat flour or breadcrumbs (plus more if needed)
  • Salt and pepper to taste
  • Optional: pinch of chili flakes or ground coriander for extra depth
  • Oil for pan-frying (avocado or grapeseed recommended)

  1. Mash & Mix
  • In a bowl, mash chickpeas with a fork or pulse in a food processor until mostly smooth but still textured.
  • Add onion, garlic, herbs, spices, sesame oil, lemon juice, and flour. Mix well.
  • Adjust consistency—add more flour if too wet, or a splash of water if too dry.
  1. Shape with Intention
  • Form into small patties (about 2 inches wide).
  • Let rest in the fridge for 15–20 minutes to firm up and deepen flavor.
  1. Sear with Soul
  • Heat oil in a skillet over medium heat.
  • Cook patties 3–4 minutes per side until golden and crisp.
  • Drain briefly on paper towel if desired.
  1. Serve & Shine
  • Plate alongside your cabbage stir, drizzle with tahini or lemon-herb yogurt, and sprinkle with sesame seeds or microgreens.
